You could be doing everything right and still pouring half of it down the drain. Literally. 🥦🚿
Boil a vegetable and up to half its water-soluble nutrients leach straight into the water — the same water almost everyone drains and discards. You did the work of buying and cooking the vegetable, then threw away a chunk of the reason you bought it. 😮💨
- Or keep the water and build a soup base out of it. 🍲
- Roast lower and slower rather than blasting high heat. Leave part of your vegetables raw — not because raw beats cooked, but because raw keeps what heat destroys.
There's a second leak most people don't know about. Vitamins A, D, E, and K are fat-soluble — meaning without fat in the meal, they mostly pass through you unused.
A dry salad with fat-free dressing is mostly decoration. 🥗
Add the avocado. 🥑 Add the olive oil. It's not a style choice, it's the mechanism that makes the vegetable count. 👌
Try it tonight: half an avocado on a meal you'd normally eat plain.
Notice if you feel more or less nourished.. ✅
