Here is an Ethiopian way of making potatoes.
3–4 potatoes, peeled and cubed
1 onion, finely chopped
2 tomatoes, chopped blended (or 1 cup canned tomatoes)
2 cloves garlic, minced
1 tsp ginger, minced
4 tbsp oil
½ tsp chili powder (Ethiopian Berbere for heat)
1 tsp salt (adjust to taste)
1½ cups water
