Here is an Ethiopian way of making potatoes. 3–4 potatoes, peeled and cubed 1 onion, finely chopped 2 tomatoes, chopped blended (or 1 cup canned tomatoes) 2 cloves garlic, minced 1 tsp ginger, minced 4 tbsp oil ½ tsp chili powder (Ethiopian Berbere for heat) 1 tsp salt (adjust to taste) 1½ cups water

Gluten free flat bread : I have failed to make the perfect enjera for two reasons : 1. I have used my pan to make Ethiopian home made bread (Difo) with some oil and left without cleaning the oil with salt. Which affected my Enjera! 2. The second part of the mixture was not proportional to my main mix. When it is too much you get Enjera like this when it is less the texture of the Enjera is dry after few days. Do not worry I have another mix that is Due on Friday will show you the outcome 😍
