Tonight’s Dinner Adventure
Tonight began with chicken thighs, more carrots (of course), and the broccoli that has been stalking me for days.
The broccoli has been granted a stay of execution.
While rummaging through the pantry cupboard I discovered a packet of dried mango I’d completely forgotten about. Suddenly an idea appeared.
Chicken thighs browned.
Onion softened.
Curry spices toasted.
Then in went stock, coconut cream, chopped carrots, and the mango. The chicken went back into the pot and simmered while the rice cooked.
By the time it was ready, the little bits of mango had melted into the sauce and the bigger pieces gave these lovely fruity pops through the curry. A squeeze of lemon at the end and it was absolutely delicious.
Completely improvised.
Completely successful.
The broccoli is still waiting.
Its day will come.
