Found this delicious chicken pasta recipe online and had to share it!
Super easy crockpot meal prep that tastes good and is solid on the macros side!
I have added it to my regular lunches for work.
Here’s what you need:
✅ 2-2.5 pounds chicken breast
✅ 28oz can whole, peeled San Marzano tomatoes
✅ 85g sundried tomatoes
✅ 15g (1 Tbsp) olive oil
✅ 1 Tbsp salt
✅ 1 Tbsp dried oregano
✅ 1 Tbsp garlic powder
✅ 1 Tbsp red chili flakes
✅ 1 tsp black pepper
-Cook in the crock pot on high for 3 hours or low or 4 hours
-Then…. Cook 1 box of protein pasta according to the box ( I use Barilla spaghetti)
Make the sauce in a blender:
✅ 3 cups low fat cottage cheese
✅ 4oz of low fat cream cheese
✅ 120g of grated Parmesan cheese
✅ 1.5 cups low fat milk
✅ salt and pepper as you desire
-Mix the pasta and the sauce into the crockpot and cover for 20 minutes
-Serve up or divide it up into meal prep containers (I can usually get about 8 meals out of it!)
