Enchilada Chicken Pasta
Need an easy, delicious, marco friendly meal?
Here's one a recently tried and it is well worth it!
Enchilada chicken pasta
What you need:
✅ 2-2.5 pounds of chicken breast
✅10 oz can of Rotel (diced tomatoes and green chilis)
✅14oz of Enchilada
✅ 14oz Chicken bone broth
✅ 1 Yellow onion
✅ 1 Bell pepper
✅ 1 packet of fajita seasoning
✅ 1 box of protein pasta (I used Brami)
✅ 2 cups of low fat Mexican cheese
✅ 1 cup of nonfat greek yogurt
How to make:
🎯Combine chicken, rotel, enchilada sauce, diced onion and bell pepper, chicken bone broth, and fajita seasoning into a crockpot
🎯Cook on high for 4 hours or low for 6 hours
🎯 Cook your pasta with about 30 min left and cook for HALF the box recommend time
🎯At 10 min left add in your pasta, cheese, and non fat greek yogurt to the crockpot
🎯Mix well and cover for the final minutes to let everything thicken
🎯 I divided it up into 7 servings and stored for meal prep
