Baingan Chokha Ingredients * 1 large eggplant * 4 cloves garlic * 1 fresh green chilli, finely chopped * 1 small onion, finely chopped * 1 medium tomato, finely chopped * Fresh coriander, chopped * Salt to taste * 2 tbsp cold-pressed mustard oil, or more to taste Method 1. Cut the eggplant into quarters, keeping the crown intact. Stuff the garlic cloves into the cuts. 2. Roast at 200°C for about 30 minutes, or cook directly over an open flame or charcoal, until the eggplant is completely soft. 3. Cover with foil or a clean tea towel for 20 minutes to loosen the skin. 4. Peel and discard the skin. 5. Mash the flesh with a fork, then mix in the remaining ingredients. 6.
