Pain au Levain Dough
I am in the process to make Pain au Levain dough. I finished coil folds set 2. The dough looks good.
I used
70% white flour ( bread flour)
20% plain flour ( all purpose flour)
10% wholemeal rye flour
72 % water
25% levain
2% salt
