This hearty breakfast scramble comes together in just 45 minutes (only 15β20 hands-on!) and I promise you won't miss the eggs, meat, or cheese.
Here's my process for this beauty:
Start with roasted red baby potatoes β diced, seasoned, oiled, and roasted until golden. While those do their thing, sautΓ© a colorful mix of mushrooms, bell peppers, and red onion in a cast iron skillet. Today I threw in a can of black beans for extra protein and staying power. Layer everything into a casserole dish, then drizzle generously with a homemade cashew queso β creamy, smoky, and dangerously good.
The result? A filling, flavor-packed breakfast that happens to be completely plant-based.
My husband and my daughter's partner usually get their own Saturday morning spread but today they ate what we ate β and loved every bite. π
