Hold the Mayo - Home made Mayonnaise
Do you like mayonnaise but find that you don't use a store-bought jar fast enough to keep it from spoiling? If you do, this quick and easy recipe might be the solution for an as-needed option.
To make it, you'll need the following:
1 cup vegetable oil
2 eggs
1 Tablespoon Lemon Juice
1/4 teaspoon salt
1/2 teaspoon Mustard
a high-speed mixer or immersion blender.
Simply put all the ingredients into an appropriately sized container to accommodate your mixer and whip until the mixture is the consistency of mayonnaise.
Feel free to adjust the lemon juice, salt and mustard to taste.
As mentioned, by olive oil can be substituted for a healthier option
