Canola oil. Corn oil. Sunflower oil. Cottonseed oil. They’re everywhere. They’re in restaurant food, salad dressings, frozen meals, chips, sauces, breads, protein bars, and countless processed foods. The question isn’t whether they’re “poison.” The better question is: What actually happens after you eat them? Let’s break it down. ⸻ Section 1: Understanding Seed Oils Seed oils are rich in a fat called linoleic acid, an omega-6 polyunsaturated fatty acid (PUFA). That sounds complicated, but here’s why it matters. Polyunsaturated fats contain multiple double bonds in their chemical structure. Those double bonds make them far more chemically unstable than saturated fats. In other words… They oxidize much more easily. Think of metal rusting after being exposed to oxygen. Fats can undergo a similar process inside the body. ⸻ Section 2: Lipid Peroxidation — When Fat Becomes Damaged When unstable fats react with oxygen, a process called lipid peroxidationoccurs. As these fats break apart, they create highly reactive compounds including: 4-Hydroxynonenal (4-HNE) Malondialdehyde (MDA) These compounds have been studied because they can: • Damage cell membranes • Bind to proteins • Interfere with normal cellular communication • Increase oxidative stress Linoleic acid happens to be one of the fats most susceptible to this process. That doesn’t mean every molecule becomes harmful. It means it has a greater potential to oxidize compared to more stable fats. ⸻ Section 3: Oxidation Leads to Inflammation Here’s where things become important. The general pathway looks like this:
