Widely regarded as one of the godfathers of the Dublin cocktail scene, Paul has helped shape the city’s modern bar culture. He has established some of Dublin’s most respected cocktail destinations, including SABA, Kinara, The Blind Pig Speakeasy, and his current home at Buswells Bar in Buswells Hotel.
