Pendang curry & homemade chapati
So didn’t think I had much in the cupboard tonight , but had a pendang paste
Shallow fried in garlic, chilli & coconut oil
Sweet potato
New potato
Red pepper
Onion
Cashews
Green lentils
Spinach would of been nice so add if you have it
Vegetable stock and water, gauge with the amount of ingredients (no measuring here)!!!
Chapati. - I added chilli & garlic because I can (optional). Water, flour & salt. Mix it in a big bowl until you’ve got a dough. Again measure by eye
Roll on a floured surface and either dry fry or I used a tiny bit of coconut oil Few minutes on either side on medium heat. I used a rice cooker cup of rice v cup of water. Same in a pan don’t over water add salt. Boil and then simmer
Made in half an hour start to finish. Voila !!!
