Crust
- 4 graham-cracker sheets, crushed
- 1 tablespoon melted butter
Cheesecake filling
- 1 cup low-fat cottage cheese
- 1 cup plain Greek yogurt
- 1 scoop vanilla protein powder
- 2 tablespoons sugar-free cheesecake pudding mix
- 1 teaspoon vanilla
- Sweetener to taste, if needed
- Strawberry topping
- 2 cups chopped strawberries
- 1 tablespoon strawberry preserves
- 1 teaspoon lemon juice
- Extra graham-cracker crumbs for topping
Directions
- Mix the graham-cracker crumbs with the melted butter. Press into the bottom of a small container.
- Blend the cottage cheese until completely smooth.
- Add the Greek yogurt, protein powder, pudding mix, vanilla and sweetener. Blend again until thick and creamy.
- Spread the cheesecake filling over the crust.
- Mix the strawberries with the preserves and lemon juice.
- Spoon the strawberries over the filling, gently swirl in some of the sauce and sprinkle with extra graham-cracker crumbs.
- Refrigerate for at least 2 hours—or pop it into the freezer for about 30 minutes if patience isn’t your spiritual gift. 😂
For even more fiber, stir 1 tablespoon of chia seeds into the strawberries and let them sit for 10 minutes before adding them.
