I’m Lew, based in Kent. I’m a co-founder of Pink Moon Collective, a chef-led gastro-glamping project in its early phases.
My background is in Publishing (having recently left that industry after 22 years), and my partner is an executive chef. We’re working towards a small, low-impact pilot site, most likely operating under an exemption licence, with food at the centre of the guest experience.
Right now, we’re in active conversations with a couple of potential land partners (including a regenerative farm and Forestry England) and are being deliberately phased in how we approach build, funding and permissions.
The main challenge I’m facing at the moment is site selection and structure: balancing landowner expectations, exemption-licence constraints, infrastructure costs, and a model that’s commercially viable without over-engineering the first season.
I’m here to learn from people who’ve done this properly, avoid expensive mistakes, and share anything useful from our side as we go.
