What do you say when to start pinching in what stage of building a Bonsai? Attached some trees own. Around 4 yers old now. I want the trunk to get thicker so I should let the shoots run or is it a good idea to pinch some branches?

I recently obtained this California juniper. All the branches were pointed upwards and I didn’t like the overall profile. This is my first attempt at wiring a tree. Am I headed in the right direction?
