1 cup cooked white rice
1 head romaine shredded
1/2 bell pepper sliced or chopped
1 Tbsp shallot minced
2-3Tbsp blue cheese crumbled
1/2 avocado chopped or sliced
2-3 Tbsp blue cheese or ranch dressing
Choice of chicken breast or thighs- seasoned with salt pepper and buffalo sauce cooked in the oven on a baking sheet and or installer/pressure cooker.
Assemble as you wish, measurements don’t matter! Add or omit ingredients and enjoy!
