Just had a moment.
Walked back into the kitchen and my poolish had crawled clean out of the container, all over the counter. One of the defining traits of ADHD: out of sight, out of mind. It was sitting right there the whole time, but my back was to it and I let it get away.
No worries. Itโs all going to good use.
But while it was happening, I figured this was the perfect chance to break down what a poolish actually is, what it does for the dough, and what to look for when yours is ready. Coming right up. Stay tuned.
