I want to share with you all something unexpectedly amazing that happened after I grabbed a few sprigs of rosemary from the bush just outside the supermarket—you know the kind that grows a bit wild and feels like it’s there for anyone who notices it—and brought them home to dry out in the oven because I was putting together a roast spice for a chicken. I wasn’t expecting it to be such a moment, honestly, but as the rosemary started to warm, the smell just filled the house. It was this incredible, cozy, herby scent—kind of piney, kind of earthy—and it made everything feel calmer and warmer at the same time. I actually wished you were there to smell it with me, because it felt too good not to share. By the time I took it out, the whole place smelled amazing, and it made the simple act of making a roast spice feel a bit special.

I might put some in olive oil and put it in a burner next time.
