I wrote two songs, my first time ever! 🎶 I’m trying to decide which one would make the best outro for my YouTube channel. Which one do you like best? Video on the left, video on the right, or neither one? I also made homemade plant-based milk yesterday, almond and soy. 🌱🥛 Do you make your own plant-based milk? It’s actually simple: 1 cup raw almonds + 3 cups water Place in a high-speed blender, Vitamix, Blendtec or Nut machine Blend, strain through a nut milk bag or cheesecloth, and sweeten with dates, or leave it unsweetened. Save the pulp to use in other recipes such as cookies, cake, and plant-based raw nut balls. Shake and drink. Simple ingredients. Fresh taste. Plant-powered goodness. 💚I

Sally Crawford's Lentil Curry
🌿 Simple Vegan Lentil Curry 🌿 Ingredients: 1 cup red lentils (soaked 30 mins, rinsed well) 1 tin coconut cream (400ml) 1 tin chopped tomatoes (400g) 4 cloves garlic, minced 1 onion, chopped 2-3 tsp curry powder tsp smoked paprika 1 tsp turmeric 1 tsp cumin Salt to taste Fresh herbs of your choice Squeeze of lemon to finish Method: Soak and rinse lentils thoroughly Sauté onions in olive oil until golden Add minced garlic and all spices and stir for 1 minute Add lentils, tinned tomatoes and enough water to cover Simmer for 15-20 mins until lentils are soft Stir in coconut cream Simmer gently for 10 more minutes Squeeze lemon juice in, season with salt Top with fresh herbs and serve! 🦋 Delicious served with quinoa for a protein packed meal, or cauliflower rice for a low insulin option!😋

It was so hot today, it go up to 100 degrees. Are you experiencing the heat wave in your town? I decided I needed something cool and refreshing so I made Spring Rolls for dinner with Thai Peanut sauce and a side salad with Ranch dressing. Yum!

@Marilyn Harris Off and on most of my life. As a cancer survivor, I want to make sure I am doing my best to keep my body and mind healthy to do all the things I want to do. I focus on three main goals to achieve this: eating right, staying active and praying over myself daily. I am heading out to run again this weekend and play some tennis. 🎾 Have a great weekend!
No salmon croquettes breakfast
On yesterday’s call, I shared that my daughter brought me a few jars of hearts of palm, and I mentioned that I was planning to make plant-based crab cakes. Well, this morning I woke up craving grits and salmon — so that’s exactly what I made, plant-based style! 💚 Sometimes the best meals come from simply listening to what you’re craving and finding a creative way to make it work. Hearts of palm are such a great option because they have a light, flaky texture that works beautifully in seafood-inspired dishes. Crab cakes will have to wait a while. I didn't eat all 4; only 3.😃 Have you ever cooked with hearts of palm? What did you make?🌱
