Welcome - and a little about how we’ll learn today!
Hello and welcome 👋 I’m Payal - a chef-educator and the founder of Commune Kitchen & Commune Table in Singapore. I’ve spent years teaching home cooks sourdough, fermentation, and everyday cooking, and one thing I’ve learned is this: most people don’t struggle because they can’t follow recipes - they struggle because they don’t understand why things work. That’s what this space is for. Here, we’ll focus on technique, fermentation fundamentals, and learning how to adapt - whether your kitchen is hot, humid, cold, or somewhere in between. Ask questions, share what you’re trying, and don’t worry about getting things “perfect.” I’ll start by share this introductory video from my class on making your own sourdough starter because everything else builds from there. Yes I’ve learned to not base success on if my loaves look like others. If my family and I like what is made then that’s success. It’s been a fun journey. PayPal, we do you feed your starter 50, 50, 50? Why not 5, 5, 5 to save four?

Oops Payal. Autocorrect is a pain sometimes. Why do you feed your starter 50, 50, 50 instead of 5, 5, 5, or 10, 10, 10 to save flour. I personally don’t use that much discard.
