Here’s my version of Chicken Adobo that I hope you’ll enjoy cooking and sharing with your loved ones: 📝 Ingredients - 2 lbs chicken (cut into serving pieces) - 1/2 cup soy sauce - 1/3 cup vinegar - 1 onion (sliced) - 4 cloves garlic (minced) - 2 bay leaves - 1 tsp black peppercorns (or ground pepper) - 1 tbsp brown sugar (optional, for a hint of sweetness) - 1 cup water - 2 tbsp cooking oil 👩🍳 Instructions 1. In a bowl, marinate chicken with soy sauce, vinegar, garlic, and bay leaves for at least 30 minutes (or overnight for deeper flavor). 2. Heat oil in a pan, sauté onion and garlic until fragrant. 3. Add chicken (reserve marinade) and sear until lightly browned. 4. Pour in the marinade, add water, peppercorns, and sugar. 5. Simmer covered for 30–40 minutes until chicken is tender and sauce is reduced to a rich glaze. 6. Taste and adjust seasoning if needed.
