Friday is a big one for me, I'm doing my presentation for the Market I have been wanting to get in, so if all goes well then this will be a big one for me. The project I've been working on since I have returned to CT with the restaurant I'm working with....Street Food Indian Wraps... pls hold thumbs and prays.

This to me is skill, I will never get to this level...I'm very proud my Assistant Chef -Babalo...( when I left Bukhara he was starting off as a pot washer) Rolling out the dough to that thin almost transparent thickness is pure skill. Takes longer to prepare the dough than cooking the roti, the upside dough Wok is called a TAWA in Indian Terms
