Ribs Done Right 🔥
There’s nothing like a rack of ribs cooked until they’ve got that perfect bite—not fall-off-the-bone, but tender with just enough pull. The key? ✔️ Consistent temps ✔️ Blended flavor (don’t skip the rub + sauce combo) ✔️ Patience—good ribs don’t get rushed Whether you’re running a drum, pellet, or offset, ribs are where backyard cooks turn into pitmasters. 👉 Are your team —baby backs or spares?

Cast Iron Isn’t Just for the Campfire
Cast iron isn’t just for the campfire. Too many people think cast iron is only for outdoor cooking. Truth is, it might be one of the most versatile tools in your kitchen. It holds heat, creates an incredible sear, and builds flavor you just can’t replicate with thin pans. I made a coconut shrimp and lobster fried rice in cast iron, and the texture and flavor were next level. The heat retention gives you that perfect crispy rice while keeping the seafood tender. If you own cast iron and it’s sitting in a cabinet waiting for a camping trip, pull it out this week and use it inside. Here’s the full recipe: https://youtu.be/BRiVHTplQ6Q What’s your favorite thing to cook in cast iron?

🐔 Let’s Talk Chicken. The Right Way.
Chicken might be the most cooked protein in BBQ… and somehow still the most overcooked. Dry breasts, rubbery skin, zero flavor—we’ve all seen it. That’s why we put together Smoked Chicken 101—a no-nonsense guide covering temps, seasoning, skin, and timing so your chicken comes off juicy, flavorful, and competition-worthy (or at least brag-worthy). 🔥 Your turn: What’s your best chicken tip—brine or no brine? Hot and fast or low and slow? Favorite rub combo? Drop it below 👇 Let’s help everyone level up their chicken game.

The calendar flipped, but the grill doesn’t know it’s January.
Some of you already fired it up.Some of you are staring at new gear in the garage. Some of you are still thinking about that cook you meant to do over the holidays. This weekend is the unofficial reset. No pressure. No perfection. Just good food and getting back to it. If you cooked, show it.If you didn’t, tell us what’s first. If your plan is still forming, you’re in good company. Let’s start the year the right way—one cook at a time.

This weekend we have a couple of yard birds we want to introduce to Mr. Smoke. Hoping the new camera will help with the content creation aspect of the cook. Let’s get smokin’ BigSkinny
