It was yummy. Even my daughter who doesn’t like mushrooms said it was good. Next time will be doing burgers but I didn’t have any bread. I make my own and didn’t have time tonight. My hubby threatened to get some from the store. πŸ˜•
🌯 I may have accidentally ruined restaurant shawarma bowls for myself 😳
I've been dreaming about Skewers here in Spokane, and their vegan shawarma plate they offered back in February during "restaurant week". It was delicious. So delicious that I'm shocked it isn't on their regular menu. Tonight was the night that I had to try making my own. πŸ˜„ You guys... I honestly think this bowl is even better. 🀯 ✨ Crispy shawarma-spiced roasted chickpeas ✨ Lemony yellow "scrappy" mung beans ✨ Fluffy basmati rice ✨ Cucumber & juicy tomatoes ✨ Homemade quick-pickled red onions ✨ Creamy lemon tahini sauce made with my homemade aquafaba mayo Every bite had crunch, creaminess, tang, freshness, and just enough smoky spice. Andrew gave it two thumbs up, so I'll absolutely be making it again. This recipe just earned a permanent spot in the Rooted & Wild Kitchen recipe collection. 🌿 Would you order this at a restaurant...or better yet, make it at home? πŸ‘‡πŸ’›

I wonder @Jenny Rader-Bakos could you use avocado oil or olive oil to make the spices stick?

@Jenny Rader-Bakos this reminds me of a tuna salad. I’m excited about this.

You're SECOND pantry β€” Why my freezer is my BFF 🧊 Now drop YOUR win below β€” big, small, or just still standing. It all counts in here. πŸπŸ‘‡

🎬 Watched & Rooted Wednesday β€” Spilling The Beans
Quick question β€” how many times a week are you actually eating beans or lentils? Be honest. Because this episode is about to make you want to eat them every single day. 🀘🏻 This week I am sharing a podcast episode from one of the most credible voices in plant-based nutrition on the planet. Dr. Michael Greger from NutritionFacts.org β€” Dr. G 🫢🏻 the same doctor from the What The Health lineup πŸ˜„ 🎧 Spilling The Beans β€” Dr. Michael Greger πŸ‘‰ https://nutritionfacts.org/audio/spilling-the-beans/ He covers allllll the goods! 🫘 Beans and lentils β€” the health benefits, how to prepare them, and why legumes are quite possibly the single most important food group you can add to your diet. 🌰 Nuts β€” he wraps up with a deep dive into nuts and why they deserve a permanent spot in your daily eating as well. The stat that stopped me cold 🀯 Eating just ONE cup of beans, chickpeas, or lentils every single day for three months could slow your resting heart rate as much as spending 250 HOURS on a treadmill. Two hundred and fifty hours. On a treadmill. Replaced by a cup of lentils. πŸ˜‚πŸŒΏ Dr. G. Totally free. Go and have a listen. 🎧 Come back after and tell me β€” are beans already a daily staple for you or are you just getting started? πŸ‘πŸ’¨

Yes and thank you. I will be adding beans more into our diet. Since I’m the primary cook in the family…they have to eat what I make πŸ˜ƒπŸ€£. My hubby likes chickpeas and my little one likes lentils so we will be doing a lot more with those. Anyone have good recipes for lentils for breakfast?
