Dog of choice: Sabrett skinless. Good size, hang out over the bun, stay firm, great taste. Dirty Water: about 3 cups of water, 2 tsp of Better than Bouillon, tsp onion powder, tsp cumin, 2 cloves garlic, 3-4 dashes Worcestershire. Bring to a boil, turn to low, throw in dogs. Let dogs sit 15-20 minutes. Result: Really tasty. Could have probably gone with one tsp bouillon, as evident in the picture. 2 tsp really darkened the water. Dogs tasted great, nice color, super firm. Chili sauce / canned - Castleberry: Didn’t have high hopes and it tasted as expected. I went for cheap because I knew I’d be doctoring it myself. It wasn’t good. Super pasty, heavy bean profile, not much meat profile. It does have beans listed as ingredients, but more of a paste texture than actual bean. Result: after adding my own ingredients it was better. Still wouldn’t serve it on a cart. Had to water it down with 1/2 cup water, onion powder, garlic powder, paprika, 1 tsp bullion, pepper, couple dashes of Worcestershire - edible. Buns of choice - Martins potato Mustard: Mikes Amazing Deli 👌 Dressed dogs: 1st - mustard, Onion sauce (Sabrett), Kraut, wrapped in foil, let sit for a couple minutes. Result: I like my dogs steamy when I eat them. They were perfect coming from the foil. A little messy, but delicious. Went a little too heavy on the onion sauce. That stuff can overpower all the other the flavors. Less is more. 2nd dog: Mustard, chili sauce, wrapped in foil. Result: super messy, very steamed, pretty tasty considering the crappy Castleberry chili. All in all pretty pleased with my first test run. Sabrett skinless will most likely be my go to on my cart. Taste great and look freaking awesome hanging out of the bun. Presentation. Chili sauce still a work in progress. May need to make my own but prefer canned with my own touch for ease of prep. Open to suggestions on doctored up chili sauce. Almost ready to pull the trigger on my cart, I’m all researched out lol.
