Warm Loaf
Hi! I typically set my oven to be heated up with my Dutch oven inside the night before I’m going to bake. Then when I get up, I simply score the dough and pop the refrigerated dough into the oven and bake it. My ‘problem’ is my husband cuts into the loaf before it is completely cooled. The crust is REALLY hard by day 2. Would the bread last better if it was completely cooled before cutting into it????

I baked another loaf this morning…. The heel of the loaf from 4 days ago is soft inside but still has a pretty tough outer crust.even with sealing the bag more securely. Is this common for 4 day old sourdough bread? I’m thinking about trying to make croutons this afternoon with the leftover bread. Anyone have a favorite recipe?

The only kind of bread I’ve made is the original recipe I received from a friend: 100 g Starter 350 g Water 10 g Salt 500 g organic King Arthur bread flour I mix and fold every 1/2 hour for 2 hours, then let it proof on the counter for 7-9 hours. After that I form the round loaf and cover it while it sits on the counter for about 20 minutes. Then I reform the round loaf and place it on parchment paper and into a covered basket that I place in the refrigerator for 30 minutes to 48 hours. I bake it covered in a Dutch oven for 20 minutes at 450 degrees. After 20 minutes, I remove the lid and bake it uncovered an additional 20 minutes. The loaves have all turned out great! My husband claims each loaf is better than the last. :) Is the sandwich bread recipe a lot different?
When/How to refrigerate my starter???
Hi! I’ve had starter going for a few months. I started it in late April from a packet I purchased at my local co-op. It took a while for it to double, but it’s been going strong for a while. I’ve been feeding it 50-100 grams on a 1-1-1 ratio this entire time (most times twice a day because it’s growing so fast then starts to shrink bank down to the rubber band line). I make things with the discard frequently, but still feel like I’m wasting a lot throwing discard away - one can only eat so many pieces of rosemary flat bread!😂. Since Mother’s Day, I’ve also made 1-2 loaves of sourdough bread a week - AND I’m still feeding the started 1/2 times/day. I watched the videos posted, but still have a few questions. To stop all these constant feedings, as an example should I feed it on Monday morning and put it directly in the fridge. Then pull it out on Thursday evening and feed it in the evening while leaving it on the counter. On Friday morning use the starter to make my sourdough bread. Then start the process over by feeding the starter on Friday morning and putting the loosely covered jar back in the fridge????? I hope that makes sense!

Oh, wow! I think I’ll split my starter into 2 containers for a bit. I’ll continue to feed the one while putting the other in the fridge. I’ll try pulling the refrigerator starter out and baking with it straight out of the fridge next time. If I get good results from that, I’ll ditch the second container that I’d continually fed. I’m hoping to join the Wednesday zoom call to learn more. I’ll only be able to join for about a half hour, but that’s better than not joining! Glad I found this group!
