Daily Baking Tip: Day 2
Measure ingredients accurately – Use a kitchen scale for precision. Measuring ingredients accurately is critical in baking because it’s a science—small deviations can completely change the outcome. Here’s why chefs insist on using a kitchen scale: 1. Precision Matters • Baking relies on chemical reactions between ingredients (like flour, sugar, and leavening agents). A few extra grams of flour can make cookies dry or bread dense. • Volume measurements (cups, spoons) vary depending on how you scoop—packed flour vs. loosely filled can differ by 20–30%. 1. Consistency Every Time • A scale ensures repeatable results. If you bake the same recipe twice, you’ll get the same texture and flavor. • Professional kitchens use grams or ounces for this reason—less guesswork, more reliability. 3. Easier Conversions • Recipes from different countries often use metric or imperial units. A scale makes switching between grams and ounces simple. • It also helps when scaling recipes up or down. 4. Cleaner & Faster • You can measure directly into the mixing bowl, reducing dishes and speeding up prep. Chef’s Tip: Invest in a digital scale with a tare function (zeroing out the weight of the container). It’s inexpensive but makes a huge difference. A nice scale you can get is from Walmart https://mavely.app.link/uTFBN8elVZb

Right!? Thus the reason I don't bake as much as I cook savory dishes. I can bake... but it's difficult to stick to a recipe when you were taught to cook without them, just estimations and a lot of love.

I'm Dar, hello. I'm from Alaska. Favorite thing to cook... gosh I have so many, fluffy biscuits, apple crisp, baked chicken, braised beef tips... can't choose just one. You have an interesting name, can I ask how it's pronounced? Or if you have a nick name you go by?

@ZsaYvonne Leonard Definitely different. My parents thought it a good idea to give us each three first names (Darlene Donna Linnea) so if we didn't like one we could use another. Do you mind if I call you Zsa or ZsaZsa? All my friends call me Dar. šŸ˜
Saturday Sweets
Saturdays are a perfect time to slow down, relax, plan for the week ahead, and enjoy a little fun with kids—or grandkids in my case—and with a spouse or friends. Whatever you choose to do today, I hope it’s filled with joy and that you create precious memories with the people who mean the most to you. Today, it is rainy and a high of 71 degrees. It will cool down drastically but today I will enjoy the warmer weather and will be spending my day in the kitchen whipping up something sweet and planning my week ahead. So come along and let me show you the delicious treat I have planned for today! Pecan Pie Cobbler A cozy, soul-warming pecan pie cobbler with a rich, buttery crust, brimming with toasted pecans and luscious, gooey sweetness. This timeless dessert is a cherished heirloom recipe, passed down through generations, celebrating the beauty of simple pleasures and the heartfelt comfort of homemade baking. Ingredients: •Fresh pecans: 2 cups, chopped •All-purpose flour: 1 cup •1 cup– Granulated sugar: 1 cup •Brown sugar: 1 cup, packed •Unsalted butter: 1 cup, melted •whole milk: 1 cup •Eggs: 4, large •Vanilla extract: 1 teaspoon •salt: 1/2 teaspoon Instructions: 1. Preheat your oven to 350°F (175°C) and grease a 9x13 baking dish. 2. In a mixing bowl, combine granulated sugar, brown sugar, melted butter, vanilla extract, and Mix until smooth. 3. Add eggs one at a time until fully blended. 4. In a different bowl, whisk together flour, baking powder, and salt, then fold into the wet ingredients alternating with milk 5. Gently add pecans into the mix. 6. Pour the mixture into the greased baking dish and spread it evenly 7. Bake for 30-35 minutes or until the cobbler is golden brown. Allow the cobbler to cool slightly before serving. Enjoy warm with a scoop of vanilla ice cream or a dollop of whipped cream. Or even a caramel drizzle. This is a super simple recipe that everyone will enjoy.

Yummy. Thanks for the recipe too. I spend Saturdays talking with my sister. She lives in TN and the best we can do to hang out is over the phone. So we both put out ear buds in and go about our day while we chat. Here in Alaska it's 10 degrees F and snowing. We're in the midst of a "weather event". We can get up to 18" of snow in the next couple of days and up to 50 mph winds. Fun times.
