In my wine / chocolate paring class I pair an Alan Scott Sav Blanc with a peppermint patty. Blame my wife for that one. Amazing two pallet transformation.

Let me simplify this a bit. Select a wine from a European region, like Sicily. Then, select a white or a red wine food recipe. Before mass transit, cars trucks trains and busses, the winemakers would make wines to go with grandma's recipes.
