I once made a starter expecting it to reach its peak stage in around 5-7 days. On day 3 the vase in which I put it was already overflowing!! I got scared that I something was not right honestly xD I put it in the refrigerator because I've heard that I can store it for up to a month, but I never really found the time to use it, so I threw it away :( I've never made sourdough dough, or any kind of bread in general and I'm a little confused about what should I do and what technique I should use. The info online is honestly so contradicting, no idea how to start, if I need to preshape, how many times, how to bake without a dutch over. Generally I'm very lost on the topic but I'm willing to learn :')👍
