Big Morning ahead...
I'm up in the Clare Valley and a small business in Auburn has asked me to make some bread for them. 6 Sourdough (2 with olives), & 6 regular white loafs. All prepared & in the fridge for an early start tomorrow... wish me luck.

I dropped off my loaves this morning, had a coffee with the shop owner, 30 minutes, all gone. Then came the question... do you have the capacity to double the order. eeek. Plain Sourdough Olive & Thyme Sourdough (really popular), plain sandwich bread, and wholemeal bread. Have to wait until my sparky puts two new power points in so I can run more ovens.

If anyone is interested I have a couple of commercial ovens for sale..They run on regular 10A household power and the same one I use. Capacity for 6 loaves. Drop me a message for more details.

@Steve Koschella lovin' the sourdough journey, also making compound butters to compliment the bread. Chilli & chives, Reisling & spring onions flavours yesterday plus just plain salted

Cold Proofing Question
Is it ok to put the dough into the fridge three hours into a five hour proof, then continue proofing the next day for two hours before shaping and returning to the fridge for the retard?
