🌱🥩Organic? Non-gmo?!?
🌱Shopping for real, nutrient-dense fuel that supports cellular health, lowers inflammation & extends your healthy years? 🌱These terms get thrown around a lot. Here’s the breakdown (what they actually mean + if they’re legit for longevity): • Organic – No synthetic pesticides, fertilizers, sewage sludge or GMOs. USDA-certified.VALID – Dramatically cuts pesticide residues linked to hormone disruption & chronic disease. Often higher antioxidants. Worth the premium. • Non-GMO – Ingredients not genetically engineered.VALID (with nuance) – Avoids glyphosate-heavy crops & potential unknown long-term effects. Science says GMOs are “safe” but longevity purists skip them. Bonus if paired with organic. • Grass-Fed (beef, dairy, lamb) – Animals ate only grass & forage their entire lives (no grain).SUPER VALID – 2–5× more omega-3s, CLA, vitamins A & E. Better anti-inflammatory profile. Huge upgrade vs. grain-fed. • Pasture-Raised – Animals lived outdoors on grass, moving freely (not feedlot).SUPER VALID – Superior nutrient density + lower stress hormones in the meat/eggs. Best animal-welfare & nutrition combo. 🌱Other common “fresh food” terms: • Free-Range – Some outdoor access (but could be a tiny door for 5 minutes).Semi-valid – Better than caged, but vague standards. Not as strong as pasture-raised. • Cage-Free – Hens not in tiny battery cages (still packed indoors).Mostly marketing – Minimal health benefit for you. • Antibiotic-Free / No Antibiotics Ever – No routine drugs.VALID – Reduces antibiotic resistance risk & drug residues. • No Added Hormones / rBST-Free – No synthetic growth hormones.VALID (for beef/dairy) – Avoids endocrine disruptors. (Poultry can’t legally have them anyway.) • Wild-Caught (fish) – Harvested from the wild.VALID – More omega-3s, fewer contaminants & antibiotics than farm-raised. • Regenerative – Farming that rebuilds soil health & sequesters carbon.VALID & NEXT-LEVEL – Often the most nutrient-rich food on the planet.

As a professional cook who pays attention to nutrition ? Yes there is continuous and ongoing debate in the food industry about the aboved mentioned items. Read the labels and do the best you can. I try, but you also must realize that almost every commercial snack, fast food IN AMERICA is made with GMO, corn rice or flour. So without getting political , I will say , our corporatocracy has absolutely destroyed our access to clean, healthy non modified food. Because when your countries major food suppliers are a blue chip stock? Tyson, Con Agra, Kraft, Sysco etc? They give not 2 shits about your health as long as the profits are good.
Smoothies!!
Smoothies, my savior on nutrition.. for me? Matcha, Non Dairy Milk, (almond, soy or oat) Good Honey, Vegan Proteins, Green power mix and Collagen powder. 🫐 I then add a lot of Spinach a few raw eggs and 2 Bananas. About exactly 36 oz or a Full Quarts worth. Maybe 600-750 calories at most but PACKED w nutrition thats hard to get in much of our "Regular" meals, etc. Also high fiber via raw Spinach. Smoothies are my Savior. Also my TOTAL Cholesterol dropped 60+ points in last 90 days as a result of exercise, activity, and MATCHA!! Which is one of the strongest, loaded with "bad Cholesterol" destroying antioxidants known as Chatecins!! Did you know that matcha is such a powerful antioxidant? That if you use too much of it in a short period of time , it actually can become toxic? It's That powerful !!. Then Combined with Blueberries? Absolute Free Radical Cell destruction. Chemical Warfare on a molecular level that is actually good for you!! Also used a meal substitute. My overall Cholesterol numbers were 296 in Dec now at 235 ish from one week ago bloodwork .I say No to statins. I Loath those drugs. They destroy your bodies natural metabolism of Fats. Period. If you are not morbidly obese? With pre arterial blockage? I see no reason to use statins as overprescibed by EVERY Dr. I've seen last 20+ years. Smoothies are a self made Superfood! my goal by June? to get that total Cholesterol down under 200. "Let FOOD BY THY MEDICINE..." Socrates or Maybe Hippocrates. 😁
🩸🩸Bloodwork Cheat Sheet
🧬Hey everyone!!!! I utilize this cheat sheet for my own bloodwork and for friends and family. I talk about it in my book but I extracted it and made into a separate pdf you all can download! 🧬Hope you guys find some benefit from this! 🧬I go over blood tests you should get each year, why each marker matters for preventing disease and extending healthspan, the standard lab ranges versus tighter optimal longevity targets, clear “when to worry” red flags, and simple, book-aligned fixes in diet (e.g., fasting, olive oil, fiber), exercise (Zone 2 + strength), sleep, and targeted supplements to bring your numbers into peak territory! Cheat Meal Damage Control: Cheat meals can wreak havoc by spiking blood sugar and insulin, triggering energy crashes, digestive distress, inflammation, fat storage, and foggy focus. Before the Cheat Meal • Weight lift right before ———Boosts insulin sensitivity, blunts spike, and gives a place for food to go to (protein to rebuild muscles, sugar to refill glycogen storages) (studies) • Take berberine (supplement) ———Lowers postprandial glucose via AMPK (clinical trials) During the Cheat Meal • Eat high-fiber foods first (veggies/protein before carbs) ———Slows carb absorption, cuts glucose spike (RCTs) • Eat slowly ———Improves digestion, enhances satiety signals • Take digestive enzymes ———Breaks down fats/carbs, reduces bloating • Share with family ———Boosts mindfulness, enjoyment & wellbeing After the Cheat Meal • Walk 20–30 mins right after ———Lowers glucose peak fast (multiple studies) • Drink lots of water ———Flushes sodium/sugar, cuts bloating • Sauna the next day ———Reduces inflammation, aids metabolic recovery, helps detox Simple, science-backed strategies to minimize the damage and stay on your longevity path. Save this for your next indulgence! Pictures attached have been my cheat meals over my latest vacation

@Vinnie Lamonica yeah, it's tough as a chef because I work in a place where the girls are always baking. So of course , i'm going to have one cookie here , half a brownie there, try a cream cake bite over there. Ha but I try to get the bulk of my nutrition calories from healthy foods and I rarely eat a meal at work. Because I make the food I know what it's composed of. Not bad food. Just a lot of Sysco processed, packaged, pre prepped crap. Lets talk about Sysco and how THEY HAVE RUINED AMERICAN DINING OUT food. The Monopoly they are. 50+% of the food Americans eat from coast to coast are from one main supplier to EVERY RESTAURANT/Cafe etc., including Prisons & Hospitals.

@Vinnie Lamonica Sysco buys at commodity, broker level. By the Hectares or Tons. Needless to say? For Proteins? Beef, Poultry, Seafood? Uggh. I don't want to even start. Veggies and Fruits?? 🤣🤣🤣🤣. Dude its like this? "WE" meaning YOU as consumer and ME as a Culinary Professional? Don't have much of a choice in M-U-R-I-C-A Now do we? When you eat out, just ask."What is your food supply chain? Do you use locally sourced food purveyors when possible? Where you get your proteins?" Because if they are buying more local? That's why that place is good. U.S. Foods is a little better. But not by much.. on r/KitchenConfidential ? Its all us. We collectively hate Sysco. Haa I'm in HealthCare/Institutional cooking currently. I am amidst many who've eaten badly thier whole lives. So were "stuck" by margins on food. Typical. Because profits before people Bruh. If I become Kitchen Manager? First task? Dump Sysco.
