Keeping it simple this week because healthy eating doesn't have to be complicated ๐Ÿซถ๐Ÿป This week's food prep: โ€ข Bell peppers sliced โ€ข Cabbage & cucumber salad โ€ข Steamed lentils โ€ข Roasted red potatoes โ€ข Marinated tofu โ€ข Homemade parsley pesto โ€ข Homemade Thousand Island dressing โ€ข Falafel for the freezer โ€ข Raw date brownie bites โ€”because balance ๐Ÿ˜† A couple of hours in the kitchen today means I can throw together quick and easy nourishing meals all week without overthinking it ๐Ÿซฃ Food prep doesn't have to mean spending all day cooking or filling your fridge with dozens of containers. A handful of simple staples can make healthy eating so much easier when life gets busy. What's on your food prep list this week? ๐ŸŒฑ

I've been dreaming about Skewers here in Spokane, and their vegan shawarma plate they offered back in February during "restaurant week". It was delicious. So delicious that I'm shocked it isn't on their regular menu. Tonight was the night that I had to try making my own. ๐Ÿ˜„ You guys... I honestly think this bowl is even better. ๐Ÿคฏ โœจ Crispy shawarma-spiced roasted chickpeas โœจ Lemony yellow "scrappy" mung beans โœจ Fluffy basmati rice โœจ Cucumber & juicy tomatoes โœจ Homemade quick-pickled red onions โœจ Creamy lemon tahini sauce made with my homemade aquafaba mayo Every bite had crunch, creaminess, tang, freshness, and just enough smoky spice. Andrew gave it two thumbs up, so I'll absolutely be making it again. This recipe just earned a permanent spot in the Rooted & Wild Kitchen recipe collection. ๐ŸŒฟ Would you order this at a restaurant...or better yet, make it at home? ๐Ÿ‘‡๐Ÿ’›

@Joy Lewis yes! I donโ€™t like mushrooms and like them. Tapped in wellness? I think thatโ€™s rightโ€ฆ has the best recipes on instagram using lions mane. I cooked on a skillet with Cajun style spices / blackened with pasta but I see so many recipes I want to try
