Happy Friday, everyone.
As we head into the weekend, I want to leave you with something I’ve learned through years of cooking, teaching, and working in the plant-based space:
You don’t have to change everything at once to make a meaningful change.
Sometimes we think eating better means completely changing our diet overnight. It doesn’t.
Start with one meal.
One ingredient.
One better choice.
One new technique.
Maybe you replace one animal-based ingredient with a plant-based alternative. Maybe you learn how to build flavor with herbs and spices instead of relying on heavy sauces. Maybe you simply put more vegetables on your plate today than you did yesterday.
Those small decisions compound over time.
Your Friday challenge:
Before the week ends, ask yourself:
1. What is one food habit I want to improve?
2. What is one plant-based ingredient I haven’t experimented with yet?
3. What is one meal I can make this weekend that will move me in that direction?
Don’t focus on perfection. Focus on progress.
And remember, plant-based cooking isn’t about taking things away. It’s about discovering just how much you can create with what you have.
