Ingredients:
1/4 cup of unsalted butter
1/3 cup of diced onion
2 medium carrots, sliced
1 stalk of celery
2 gloves of garlic
1/3 cup of flour
1 1/2 teaspoon minced fresh thyme
1 tablespoon minced fresh Italian parsley
1 teaspoon salt
1/2 teaspoons pepper
1 3/4 cup chicken broth
1/2 cup heavy cream
3/4 cup shredded chicken
Make the filling: Cook onions, carrots, celery, garlic in butter.
Whisk in flour, salt, pepper, thyme, parsley, broth, cream.
Simmer, then add chicken.
I buy pie crust and roll it out into either my cupcake pan to make minis (spray a lot of nonstick) or I buy throw away small tin baking containers and fill it with the filling and put the crust on top!
Bake at 400F until the top is golden brown!!
