I am STRUGGLING with pain au levain lately. It’s coming out ok but it’s a sticky mess when I shape it. It’s strong and got a nice window pane when I do my stretches. It rises and feels great. It’s jiggly and puffy and bubbly and then as soon as I take it out of the bowl it just doesn’t want to work with me. Thoughts?
It’s not that hot/humid in my opinion but I’m also in an air conditioned house so maybe I’m delusional lol I think I’m going to try holding back some water. Also could it be my whole wheat? I don’t use much so I’ve had this bag for a few months now and I know it goes bad quicker. It’s been in the freezer though.
