(So juicy, so easy, so healthy)
Marinade (whisk in a bowl):
· ¼ cup olive oil
· Juice of 1 lemon
· 2 garlic cloves, minced
· 1 tsp smoked paprika
· 1 tsp oregano
· Salt & pepper
How to:
1. Cut 1 lb chicken breast (or firm tofu) into chunks.
2. Toss in marinade for 15 min (or overnight if fancy).
3. Skewer + grill 6-8 min, turning once.
4. Serve with the watermelon salad + a side of vibes.
Pro tip: Double the batch – cold leftovers are AMAZING on a salad Monday.
