(Sweet, salty, juicy – 5 minutes, no cooking)
Ingredients:
· 4 cups cubed watermelon (cold = best)
· 1 cucumber, chopped
· ¼ cup crumbled feta (or dairy-free)
· Handful fresh mint, torn
· Squeeze of lime
· Sprinkle of chili powder or tajín (trust me)
How to:
Toss everything in a big bowl. That's it.
The mint + lime + tajín = FIRE. 🔥
