This my sourdough Roasted Walnuts and Sunmuscats and Cranberries swirl loaf that i taken 100 grams from my Tangzhong was left with 150 grams of Tangzhong so just made up the extra hydration for my Tangzhong cinnamon buns..
The bread i bake was soft and delicious was on day four the sourdough was still moist to consume .. glad now i sneak the 100 grams of it last Saturday and place into the dough i tweak Henry recipe and placed Roasted Walnuts… Sunmuscats and Cranberry’s here it is Henry…on the last stretch and fold i placed the fruit and walnuts to get the swirls mostly rose to the top where it was a little burnt with the fruit but overall i was pleased with texture of the dough the blisters on the dough the activity of Bella V never let me down she did her job of beautiful rise and taste was soo good 😋😋😋🥰
