Sprouted spelt addition
Having never tried spelt, I decided to add 10% sprouted spelt to my sandwich bread, and I really liked it, i smelled great, and had a mild nutty flavour. It took a long time to reach windowpane, but that was baker error, I knew to add vital wheat gluten, and forgot it. I also substituted whey(yogurt) for the water.
