Shokupan Yeasted recipe but sourdough starter used instead of bought dried yeast..
Last night i decided to use Henry recipe for Japanese Bread instead of dried yeast i used my starter Bella V 130 grams i used and Tangzhong paste including in the recipe i follow it to a T i wasn’t sure if it would work as well as the dried yeast recipe as i did not have a Levain only counting on my active starter i did not want to waste it and i had too many dehydrated Bella V in my fridge so rather than place her in the fridge i decided to have a go challenge myself to see if it would be a flop or success .. i have waited over 3.5 hours for it to completely cool before i rip it apart to see the fluffiness and the texture ( the Crumb) i decided to take pics of my steps of cooking and decided at last minute before placing in seal bags to slice part of the loaf just for peace of mind it was like the bread i bake the day before using the hundred grams of Tangzhong robbing it from my bake on Saturday..here are my pics of last nights bake Shokupan .. i haven’t shown my nephew who married a Japanese lass she be thrilled to bits because her second son name Sho.. maybe after their traditional bread.. i hope you like the pics Henry
