The Jalapeño Cheddar Loaf looked so good when you posted it . The recipe kept calling me. And since I was having a fight with Hannah, I went with the yeasted version of the “bakery style jalapeño cheddar sandwich loaf”.
I weighed everything, per usual. The dough felt really nice but when I added the cheese and the peppers (and the peppers were totally dry) it just seemed like the dough would not hold together.
During bulk fermentation, it basically had no structure.
It got a nice rise, but it was not holding together so I took it out after about 40 minutes and did a few folds hoping it would get some structure. Wrong.
I tried to shape it as much as I could, but it still was not holding together and I thought well, if nothing else it’ll have its own ear from the separation.☺️ Guess I was trying to find something positive. It proofed nicely and quickly (but not smooth), so it’s in the oven now and we’ll see what happens.
Somewhere I goofed. I’ll post a crumb later.
Maybe this is Hannah getting her revenge.
