I decided I wanted to make some sourdough yesterday. I got my levain started but it was awful and I didn't realize it yet. When my levain was ready I was time crunched because I need to take my pups to the vet for their yearly exam.
I quickly through together some dough and did a fermtolyse for 45 minutes. I had enough time to add the salt and then let it go in the mixer for about 10 minutes. After that I threw in my proofer for about 5 hours and then the fridge overnight.
Here's my loaf. I think it's a little under proofed, but not terrible, especially because I wasn't able to do any stretch and folds. All in all, I am happy with the hands off results.
