Ingredients
- 1 box carrot cake mix (or homemade carrot-cake base)
- 1 cup coconut milk
- 3 eggs
- 1/2 cup coconut oil, melted
- 1 tsp turmeric powder
- 1 tsp cinnamon
- 1 tsp ginger
- 1 cup chopped pineapple
- 1 cup chopped apples
- Chopped nuts, for topping
Instructions
- Preheat oven to 350°F (175°C) and line a loaf pan or muffin tin with parchment.
- In a large bowl, mix all dry ingredients.
- In another bowl, whisk eggs, coconut milk, and coconut oil until smooth.
- Pour wet ingredients into dry and mix well. Fold in pineapple and apples.
- Transfer batter into pan(s), sprinkle with nuts, and bake for 25–30 minutes or until a toothpick comes out clean.
- Let cool slightly before slicing and serving.
