Did someone say DANDELION cookies🌻
🌼 I made cookies out of my lawn and I have zero regrets. Dandelion Oatmeal Cookies are officially a thing in this community — and they are DANGEROUS. Like, hide-them-from-yourself dangerous. Here's what's wild, the petals are pulled straight from the yard, folded into oat-banana dough with chocolate chips, and baked into these chewy, golden, slightly floral little bombs of joy. They taste like a cozy kitchen and a spring afternoon had a baby. And they're: ✅ Gluten free ✅ Whole food plant-based ✅ Made with stuff you probably already have ✅ Literally growing in your yard RIGHT NOW Your lawn has been trying to feed you this whole time. 🌿 just make sure you are always using dandelions from a yard that has not been sprayed! Recipe is up in the classroom — go make these immediately and report back. I need to know I'm not the only one who ate four of them. 👀

Ben & Jerry's VS Nice Cream 🫣
A couple weeks ago Fred Meyers had Ben & Jerry's dairy-free ice cream on sale for $2.99 a carton! It's normally $6.99 a carton. So of course I bought hubby and me several 🤣🫣 After 3 days of enjoying them for dessert my tummy was not a happy camper! I flipped over and read the nutritional content and ABOUT DIED. I'm trying not to be as rigid as I was in the beginning but damn, this stuff is horrible. Because who eats ⅓ of that small carton in one setting??? I surely don't 🤭 I told my hubby the B & J was allllllll his and went back to my nice cream. Three nights in a row for supper ( yes supper 💛) and I haven't looked back. Ingredients: 3 bananas 3 medjool dates 4oz raspberries 4oz blueberries ⅓ cup the only bean crunchy roasted edamame made with avocado oil ⅛ cup shredded roasted coconut (one ingredient) 2 tbsp trader joes cacao powder 1 tsp orgfun vanilla bean powder The results are astounding! And if I am being totally honest I enjoyed my nice cream over the B & J 100%. Like it wasn't even close. Not to mention this did not give me a tummy ache, gas, or the 💩s. My nice cream: 📊 GRAND TOTAL Calories - 882 Total Fat - 14g Saturated - 8g Total Carbs - 183g Sodium - 134mg Sugar - 110g* Added sugar - ZERO Fiber - 38g Protein - 24g *Sugar is entirely natural fruit sugar — zero added sugar in this mix. Vitamins & Minerals Approx. Total Potassium - 2,580mg (55% DV) Vitamin C - 76mg (84% DV) Magnesium - 190mg (45% DV) Iron - 3mg (17% DV) Vitamin B6 - 1.7mg (100% DV) Folate - 95mcg (24% DV) Vitamin K - 41mcg (34% DV) Manganese - 1.8mg (78% DV) The Ben & Jerry's totals are in the photos below, along with a snapshot of the ingredients...I mean if you can even call them ingredients. This is part of the reason I believe the label "vegan" " non-dairy" or " plant-based" doesn't automatically mean healthy — especially for the folks living on ultra-processed versions of their favorite foods. They draw you in. They get you addicted. End of story. 🫶🏻

Snack plates are THE BEST PLATES 🌶🍅🥑
A little pre-funk snacky snack before my lunch date with a friend later today. I'm making us vegan Moong Dal for the 1st time 🥳 But 1st I snack! This took less than 5 minutes to throw together and that included blending this quick and easy cashew queso (no soaking required!). An avocado with everything bagel and a sprinkle of cayenne, a couple of vine mini tomatoes, 2 mini red bells, a small handful of those Siete chips and the star of the show 🥁 cashew queso! I not only dipped the chips but also dipped the maters and the mini bells!! So tell me, do you prefer eating raw snacky snacks or do you prefer them cooked??? It honestly depends on my mood and how long I want to spend in the kitchen 😆

From Sick & Tired to Rooted & Wild 🫶🏻
Hey there! I'm Jenny (your host) — a wife, a mother to 3 amazing grown kiddos, and newly an Oma to 2 beautiful little granddaughters! In my spare time you'll usually find my nose in a good book or my Bible. One of my favorites is You Are the Placebo — life-changing book right there! Joe Dispenza is such a fascinating author! We are outdoor people and LOVE camping! I also enjoy walking, hiking, and I'm a total gym rat — working on my perfect home gym! My hubby and I are also homebodies, and my favorite thing to do is probably watch scary movies. I love to be scared. 🤡 I'm a juicer and in my happy place when I'm knee-deep in food prep or creating a new vegan recipe (or three 🤪). I'm also a self-taught, full-time plant-based experimenter 🌿. I went plant-based a little over a year ago after witnessing firsthand what food could actually do — and heal — for me. I had tried it ALL. Keto, Carnivore, Atkins, GLP-1, powders, pills… you name it. Nothing worked, and I was simply sick and tired of being sick and tired. So I joined a 28-day online fruitarian challenge — and went all in. 🥳 Since then, I've shed 60 lbs naturally, reversed Type II diabetes, dropped my fasting blood sugar from 165 → 72, lowered my A1C from 6.9 → 5.0, healed my gut, cleared my brain fog, reversed insulin resistance, reduced my inflammation, and finally started pooping daily (hallelujah 🙌). Once my body felt this good, my heart naturally followed — and that's when I became fully vegan. For the first time in my adult life, I've been able to maintain a healthy weight — and at 48 years young, I'm on ZERO medications, prescription or over-the-counter. That's huge, considering I was medicated for most of my adult life. I'm here to share the real, the messy, the delicious, and the always-magical journey of living plant-based — the food, the habits, and the everyday wins (and losses) — so you can see that healthy living doesn't have to be hard or boring.
