Nashville BBQ
Hey guys, I’m in Nashville attending the National BBQ Association’s conference. This is my first conference & my time in Nashville. Today is the BBQ restaurant tour starting with Jack’s BBQ. Most everything on my plate was outstanding…. the slow smoked St. Louis rib, pulled pork, turkey, BBQ baked beans, and collard greens. I also tried the brisket which was extremely tender but the bark could have used a little more flavor. Overall, Jack’s knows what they’re doing! I’ll try to share pictures all day starting with Jack’s.

Hey Kenyatta - what a great trip! Question: Don't you cook a whole hog skin side down? My father-in-law cooked whole hogs in SC and made the vinegar based BBQ sauce - which I now make for my pulled pork. I don't have room for a whole hog tho😄
A Different Take On Spatchcocking Chicken
Check this video out..... they add more steps to the spatchcocking process like removing the rib bones, breast plate and scoring the legs, thighs & breasts to promote more even cooking and better distribution of the rub throughout the bird. This procedure in spatchcock 201 - i just take out back portion. Because I'm Uber particular about presentation I hesitate to sliced the meat to the bones. Lastly, I think the breast bone helps to keep the breast tender and juicy so I vote to leave it in! 😋

I'm going to a friend's house!!😄 I am making hickory smoked pulled pork for sandwiches and tacos and sweet and smoky chickens on Sat so I don't have to cook on Sunday

Hickory smoked rub tips. Costco cuts st Louis ribs into strips that are easy to handle. I think I will put them on my menu. Should I sell them by serving size (how many) or by the pound?
